When he first joined, Green & Black’s held 95% of the organic market but barely registered in overall chocolate sales. Mark repositioned it as a mainstream product and saw turnover rise ten fold even before its purchase by Cadbury Schweppes. He advocates outsourcing to increase speed, being unafraid of niche markets, and investing in brand not machinery.
